Legumes and rice, like all foods, should be kept in a clean, dry and cool place. It is ideal to be in a tightly closed package, either a plastic bag or a thick woven cloth with as little air as possible. The presence of air in the package accelerates the deterioration of legumes, so when using the package, it is important to compress the bag by removing excess air before sealing it again hermetically (with a rubber band or a special clip or clothespin). This is the reason why it is not recommended to use jars to preserve them, since when the quantity of the product is reduced the air in the jar increases and thus accelerates its deterioration. It is understood that keeping them in the refrigerator helps to lengthen their life, while during the warmer months it is definitely necessary for the rice that is more perishable.
